Mini Pumpkin loafs...& they're healthy ! Made with 2tbsp chia seeds in substitution for 2 eggs and a few other tweaks!Click here for recipe But beware..for those with sensitive stomachs, like mine.. I recommend using Chia in small amounts and increasing slowly as your stomach builds its tolerance. Chia side effects  I am learning more ways to incorporate chia into my diet...


Steps at simplifying our lives- instead of buying bread weekly 1 of my goals is to bake it myself. Can't take full credit - thanks to my Magic Chef bread maker (which I got for $15 from the local "Craigslist" called Okinawa yard sales) I am on my way to home made loaves of deliciousness. This time I baked it n the oven instead... Came out great!
